BREAKFAST

Breakfast kick-starts your metabolism, helping you burn calories throughout the day. It also gives you the energy you need to get things done and helps you focus at work or at school. Those are just a few reasons why it’s the most important meal of the day.

Apple pie porridge

Ingredients:

2 apples cored 

50g rolled oats

300ml plant based milk 

1 tbp rasins 

2 tsp cinnamon 

1 tbsp coconut oil 

1 tbsp honey  

1 tbsp chopped walnuts

Method:

Heat the oil in a pan, then add the apple slices, cinnamon until they soften, leave aside. In a separate pan add your chosen plant milk to the pan, heat until slow simmer then add oats and cinnamon. Cook for 3-4 minutes until oats have absorbed milk. Take pan off heat mix in raisins and apples. Pour into your chosen bowl top with honey and chopped walnuts. 


Chocolate & Peanut Butter Overnight Oats

SERVES 1

Ingredients:

50g Rolled oats

250ml Plant based milk 

1 tbsp Cacoa powder

1 BIG tsp Peanut Butter

1 Banana

1 tbsp honey  

Method:

Pour all ingredients except banana into a jar or bowl. Mash half the banana (keep the other for toppings). Pour the mashed banana into the jar/bowl with rest of ingredieant, mix all together. Cover over and leave in fridge over night. 

In the morning, whip it out of the fridge, splash a dash of your plant based milk in, top with rest of banana and a drizzle of honey and its ready to eat!


Banoffe pie smoothie

Serves 1

Ingredients:

1/2 tsp Cinnamon

1 Banana FROZEN

1 tbsp honey  

30g Pecan nuts

200ml any plant based milk

Method:

Place all ingrediants together in a blender and combine until well mixed 


Chocolate coconut granola

10 Servings

Ingredients:

300g oats

60g Pecans 

30g Desicated coconut

2 tbsp Cacoa powder

2 tbsp Coconut oil 

60g Hazelnuts 

1 tbsp Date syrup

60g raisins 

Method:

Pre heat oven to 180 degrees celsious. Heat the coconut oil, place all ingrediants in a bowl except raisins, in a bowl and mix together. Layout on a baking tray, evenly spread, bake for 15mins, check at 15mins, mix around and bake for a further 5. 

Take out oven, let it cool. Mix in raisins. Put in jar and enjoy!


PBJ Smoothie bowl

Serves 1

Ingredients:

BASE - FOR THE BLENDER:

1 Frozen banana

4 Frozen strawberries

1 tbsp Peanut butter

3 Ice cubes 

Plant based milk- don’t add too much meant to be thick!

Drizzle of honey

TOPPINGS: 

Whatever you want! Go Crazy!

IDEAS:

Chocolate and coconut granola (in guide)

Berries - raseberries, blueberries, strawberries

Chia seeds

Desicated coconut

Method:

Throw all ingredients for the base in the blender and blend all together. Pour into your favourite bowl, then top with the toppings you want!

Avocado Toast

Serves 1

Ingredients:

TOAST: Can uyse any bread but this is my fave!

2 Pieces seeded sourdough or rye bloomer

AVOCADO MIX:

1/2 A ripe avocado - finely chopped

1 Red birdseye chilli - finely chopped

1/2 tbsp lime juice 

1/2 Large spring onion

1 Jammy boiled egg - boil for 6mins 30sec

TOPPINGS: 

Mixed seeds

Salt & Pepper

Method:

Combine all ingrediants for avocado mix in a bowl, mix and season to taste. 

Boil egg for 6mins 30sec, place in cold water to stop from cooking.

Toast your bread, I like it only slightly toasted. 

Then assemble, remember to add your seeds for a delish crunchy texture.
